People have asked me how come I can’t buy palomilla steaks outside of Tampa?  Where does this steak come from?  

The palomilla steak comes from the top sirloin butt which is the center of the sirloin.  It is trimmed of any excess fat which makes this cut very lean.  Then the steaks are cut against the grain and pounded very thin.  It originated somewhere between Spain and Cuba and made its way to Tampa at the turn of the 20th century with the cigar industry.  All the Latin markets in Ybor City sold these steaks to the cigar workers.

Tonight’s menu features the Palomilla steak prepared Alicante style which is a breaded steak with Alicante sauce and a grilled jumbo shrimp on top. Ybor City’s version of surf & turf.

This class is the FIFTH day of a 5 week series.

This series of cooking classes focuses on techniques and skills needed for more advance cooking.  Students MUST have completed Cooking Fundamental Series 101 or have SIGNIFICANT culinary kitchen skills and experience.  No basic skills will be taught in this series. 

During the Series you will cook specific recipes that will enhance and build on your basic culinary skills.  The recipes take into consideration a number of different cuisines and the skills required to produce them.

Richie Farina is a contestant on the ninth season of Top Chef.  A graduate of Johnson and Wales University, he is the Executive Sous Chef at Moto in Chicago.  A three-time winner of the National Collegiate Ice Carving Championship, he trained in several restaurants in Boston before his move to Chicago. 

So that is who Richie is now, but we knew him when...Richie was a previous employee of Rolling Pin.  He worked for Karen and Chef Dave at RP Brandon Town Center.  Mind you, it was minus a few tattoos, a few piercings and a Mohawk ago, but even then they knew how talented Richie was and what a great success he would become.  

Richie's family still lives in Riverview and visits when he can.  

Chef Dave and Karen are thrilled to be hosting Chef Richie back in Brandon for his only Florida appearance and cooking classes. 

Richie's cooking style and culinary point of view is that of playful, whimsical wonderful food.  His classes promise to be both tasty and filled with fun.

Chef Rene is a graduate of the Culinary Institute of America (CIA).  In 1994, he joined the Army and has since held the title personal chef and Aide to Admirals and Generals in the US Army.  SFC Rene J. Marquis is currently the Enlisted Aide for United States Special Operations Command at MacDill AFB in Tampa, Florida.

Rolling Pin welcomes Chef Viet Vo to the Culinary Center.  Viet began cooking at the age of 14 and ever since then food has been his passion.  He graduated from The Art Institute of Tampa.  Throughout his culinary career, Viet has found success as a sushi chef, a restaurant consultant, and more recently as a culinary instructor. He is always looking for opportunities to not only improve his skills, but ways to share them with others.

Chef “V” Joins the Rolling Pin Culinary Team with a proficiency in Vietnamese, Chinese, Korean, Japanese, and Thai cooking.  His quick wit, talented cooking skills and amazing flavors will make him one of our most sought after chefs.

In this class you will learn how to make royal icing flowers.  You will make daises, primroses, apple blossoms, daffodils, pansies and roses!  You will leave with these flowers wet as they require a drying time of up to 48 hours.  Because they harden like candy, they can be saved in air-tight containers for months to be placed on your cake at a later date.  Great for those “Last Minute Cakes”.  You may enroll in the cake decorating series in any sequence. 

We supply the materials and all tools needed to successfully complete this class.

Basic Training


In this class you will learn the basics for decorating a cake.  Lisa will teach you how to level, torte, fill, keep crumbs out of your icing and ice your cake smooth.

Then, you will learn how to make a parchment decorating bag and put a design on your cake.  Finally, we will fill in your design with stars, write on your cake and do a shell border.  You will leave with a beautiful decorated cake!




We supply the cake and all tools needed to successfully complete this class.  All you need is the will to learn and the desire decorate.
